The finest hand-packed anchovies in extra virgin olive oil

Fished from the Bay of Biscay early in the spring as they return from their seasonal migration, the fresh anchovies are hand-cleaned and packed in brine to absorb their natural moisture. Following their cure in brine, they are dried by hand rolling them in dry cloths. Finally, they are hand-sorted and packed in Extra virgin olive oil to preserve their natural goodness. Although the process of preparing anchovies in this traditional manner is very laborious, the result in the finest anchovies available.
