Born from the traditions of Vic, a mountain town in the Pyrenees, and handcrafted by Spaniards here in the USA, Salchichon De Vic is one of our favorite embutidos (cured meats.) Chorizo gain their character from the Pimenton and spices added, but Salchichon relies strictly on the quality of meat used. The recipe is quite simple: take the freshest pork & beef direct from the butcher, add sea salt and fragrant black peppercorns, and finally cure the product at the ideal temperature and humidity. The result: an unparalleled cured meat rivaling the finest salami's from rustic Italy, but unmistakably a Catalan tradition.
