Not as sweet as its Italian counterpart, and definately in a category all its own due to it being crafted in the same manner as a sherry vinegar. VINDARO is a full, rich and creamy vinegar with a deep ebony color. The deep fragrance and nose comes from its artisan elaboration and slow maturation. Starting from a selection of local wines grown in the La Rioja region, Vindaro has matured for 10 years in french oak casks by the solera method. Due to its low acidity when compared to a sherry vinegar, and mild sweetness when compared to a traditional balsamic, this vinegar is perfect for cooking.
