Recipe - Torrijas de Azahar (Orange Blossom French Toast)
Ingredients
For the Sauce
1 cup Water
1 cup of Sugar
1/2 cup of Orange Blossom Honey
2 tablespoons of Lemon Juice
1 Cinnamon Stick
For the Torrijas
1 1/2 cups milk
1/4 cup Orange Blossom Honey
2 tablespoons Mallafré Gourmet Olive Oil Pressed with Seville Oranges
1 Cinnamon Stick
8 thick slices of Brioche or Baguette
3 Eggs, beaten
Canola Oil or Butter for frying

5 minutes preparation, 30 minutes cooking on the stovetop

Instructions
In a small saucepan, bring to boil the ingredients for the sauce. Once the mixture begins to boil, reduce the heat and allow to simmer for about 5 minutes or until the sauce thickens. Remove the cinnamon stick and allow to cool. To prepare the torrijas, warm the milk, honey, olive oil, and cinnamon in another saucepan. Remove from heat just before the mixture begins to boil and let cool for about 15-20 minutes. While the milk mixture is cooling, beat the eggs in a shallow dish and set aside. Heat the butter in a pan. Meanwhile, thoroughly coat each piece of bread in the cooled milk mixture and then dip each piece in the egg mixture (be sure the milk has cooled so as to not cook the eggs). Next cook each piece of bread for about 5 minutes on each side, until golden brown. Drizzle each piece with the reserved Orange Blossom honey sauce then lightly dust with powdered sugar. Serve and enjoy!
