Tips on selecting the right paella pan:
Paella pans are measured from the top edge of the pan, not counting the handles.
The serving size guidelines (listed in the item description) is an approximation based on about 1 1/2 cups of cooked rice per serving if you fill the pan up about 3/4 of the way. This would be an average serving, for an larger entree size portion, you'll want to estimate 1-2 servings per guest.
Paella pans are generally not flat, thus they don't work well on an electric or induction cook top. The domed bottom is to help the oil pool in the center of the pan, which helps the rice get crispy (Yum!)
For a heat source, we recommend one of our paella burners, a professional gas range, or cooking outside on the BBQ. You may also choose to pre-cook your ingredients in a standard frying pan, then transfer to a paella pan and finish cooking in the oven (but it won't be as good as cooking over an open flame!)
