Recipe - Ensalada de Garbanzos y Chorizo (Chickpea and Chorizo Salad)

This Catalonian garbanzo bean and chorizo salad is traditionally served hot or warm. It is a great side dish and may be accompanied with fresh bread. Some variations include the addition of piquillo peppers. With or without the addition, Ensalada de Garbanzos, is great for tapas parties!

Ingredients

3 tablespoons Extra Virgin Olive Oil
1 Onion, thinly sliced
3 Garlic Cloves, chopped
7 ounces Chorizo, sliced on the diagonal
1 Bay Leaf
2 1/2 cups Garbanzo Beans (Chickpeas), rinsed
2 tablespoons of Chicken Broth
1 small Tomato, diced
Course Black Pepper

Prep Time/ Cook Time

10-15 minutes preparation, 10 minutes cooking on stove

Recipe Size

Serves 4-6

Basic Instructions

In a medium saute pan, heat the olive oil over medium heat. Add the onion, garlic, chorizo, and bay leaf and cook until the chorizo is lightly browned (about 3-5 minutes), stirring frequently to keep from burning. Add the rinsed garbanzo beans and chicken broth and cook for an additional 3-5 minutes. Add the diced tomatoes and pepper to taste. Buen Provecho!
