Recipe - Garbanzos y Espinacas (Chickpea and Spinach Stew)

Ingredients

3 tablespoons Olive Oil
5 cloves Garlic, whole
2 slices White Bread, crusts removed
2 tablespoons Sun Dried Paprika
1/4 teaspoon La Mancha Saffron
2 tablespoons Pedro Ximenez Vinegar
1 jar Garbanzo Beans (Chickpeas), rinsed
1 1/2 cup Water
8 ounces Fresh Spinach
Salt and Pepper to taste

5 minutes preparation, 10-15 minutes on the stovetop

Serves 4-6

Basic Instructions

In a medium saute pan, heat the olive oil over medium heat. Add the garlic and cook until lightly browned (about 3 minutes), stirring frequently to keep from burning. Remove the garlic from the oil and set aside. Add the bread to the pan and fry until both sides are golden brown. Remove the pan from the heat. Place the bread and reserved garlic in a mortero (traditional morter and pestle), and grind until you have a paste and then set aside. Add the paprika, saffron, and vinegar to the pan and mix (keep off of the heat to avoid burning the saffron) and set aside. Add the chickpeas and water to a cast iron olla and bring to a slow boil. Add the spinach and simmer for 5 minutes. Add the garlic paste and paprika mixtures, then simmer for another 5 minutes. Season with salt and pepper. Divide the stew into cazuelas. For an even tastier stew, add a few albondigas de bacalao. Buen Provecho!
